Like a starting organic company, healthier, but far more expensive than the competition?

I hope to someday own & manage an eatery of some sort so I\'d like to know everything I can to make it primo ;)!

That is my own saying, because most of those "small plates" spots are a ripoff.  Very little food for the high price.

Hope the show was great and makes it to archive.
